EL CRUCERO
EL CRUCERO
El Crucero is an exciting coffee produced by Ana Mustafá, a talented coffee producer based in Pereira, Colombia. El Crucero reminds us of milk chocolate, blackcurrant and lime. This is a light-medium coffee with crisp citrus acidity and a milk chocolate mouthfeel ready to be enjoyed black or with milk.

El Crucero is produced by the Mustafa Family on their farm in the Risaralda region of Colombia. The farm is part of the LaREB cooperative run by Herbert Penaloza and Ana Mustafa. LaREB supports smaller or less experienced members with production advice and professional quality control. They also export coffee directly from the farmers which secures the supply chain and transfers more value back to producers. Ana works closely with Herbert to run LaREB.
Ana is a progressive producer who furthers speciality coffee in Colombia by developing experimental coffee processes, working with such innovation and attention to detail to be able to produce this beautiful washed coffee using a ‘fed-batch’ technique.
The coffee is separated into batches by harvest day. The first batch is put into a hopper and left for 24 hours where it starts to marinate. The cherries are then de-pulped and dropped into a fermentation tank. The second batch undergoes the same process before being added to the tank. The sugars in the second batch become fuel for the bacteria of the first batch which aids fermentation. This process is repeated 4 or 5 times to allow a long fermentation process. It creates a really fruity, almost sparkling coffee.

GRIND TYPES EXPLAINED
GRIND TYPES EXPLAINED
Whole bean: Whole bean coffee allows you to grind your own coffee right before brewing, to keep the freshness. Some coffee machines have a grinder built-in, or you can buy one separately.
French Press / Cafetiere: French Press or Cafetiere coffee uses a coarse grind. Grounds are separated from the coffee and there is no filter involved, so the oils from the coffee remain.
Filter / V60 / Kalita: Filter coffee grind is medium, like sea salt, and is made by pushing high-pressure water through fine coffee grounds, where the brew drips through a filter.
AeroPress: AeroPress coffee uses a fine grind, and creates a single serving of coffee that drips through a filter to separate the coffee from the grounds.
Espresso / Moka pot: Espresso coffee uses a fine, powdery grind. It has a lower ground to water ratio, and is usually thicker and more intense.
